Springerle

 

Springerle [pronounced: shpringerluh] cookies are often described as “too pretty to eat.” But please do! These edible works of art are Linda’s specialty, and she enjoys collecting the fabulous molds for them almost as much as baking and eating them.

The traditional flavor of Springerle is anise, but Linda has perfected several alternate natural flavors, made with flavoring oils, never extracts. Spice Road Chocolate Printen

Linda's original Spice Road Chocolate Printen recipe won first place at the 2005 Chocolate Extravaganza competition in Hermann, Missouri. With its traditional molded appearance and uniquely delicious chocolate and spice flavor components, it is a perfect melding of Old World and New World sensibilities. (In German, "Printen" describes any printed cookie, such as Springerle or Speckulatius.)

This delightful, fragrant cookie is a tasty interpretation that surely would have pleased the innovative bakers of Medieval Europe. During the Middle Ages, intriguing new imports traveled from the exotic East via the Spice Road, encouraging bold new taste experiments. When cocoa made its debut in European port cities served by ships from the New World, Renaissance cooks happily added chocolate to their repertoires, as well.
